Beef Bourguignon
Beef bourguignon, the great braised classic: tender beef slowly cooked in a full-bodied red wine with bacon, mushrooms and pearl onions. Rich and deeply fragrant, it's the generous winter dish that delights the whole table, even better reheated.
Ingredients
- 1.2 kg braising beef
- 750 ml red wine
- 150 g bacon lardons
- 250 g mushrooms
- 12 pearl onions
- 2 carrots
- 2 tbsp flour
- 1 bouquet garni
- 2 garlic cloves, oil, salt, pepper
Method
- 1Brown the beef pieces in the oil, set aside.
- 2Fry the lardons, onions and carrots.
- 3Return the meat, sprinkle with flour and stir.
- 4Pour in the red wine, add garlic and bouquet garni.
- 5Cover and simmer for 2h30 over very low heat.
- 6Add the mushrooms and continue for 30 minutes.
Tips & tricks
- Marinate the meat in the wine the day before for more flavour.
- Long, gentle cooking makes the meat melt-in-the-mouth.
Variations
- With a square of dark chocolate to round out the sauce.
- Coq au vin with chicken instead.
