Traditional Pot-au-Feu
Pot-au-feu, the iconic French winter stew: tender beef and vegetables (carrots, leeks, turnips, potatoes) slowly cooked in a fragrant broth. A complete, generous and comforting dish whose broth is also enjoyed as a starter.
Ingredients
- 1.2 kg beef (shank, chuck, shin)
- 4 carrots
- 3 leeks
- 3 turnips
- 4 potatoes
- 1 onion studded with cloves
- 1 bouquet garni
- Coarse salt, pepper
Method
- 1Put the meat in a large pot of cold water, bring to the boil and skim.
- 2Add the clove-studded onion and bouquet garni, salt.
- 3Simmer covered for 2 hours over low heat.
- 4Add carrots, leeks and turnips, cook for 45 minutes.
- 5Add the potatoes, cook for a further 30 minutes.
- 6Serve the meat and vegetables, the broth on the side.

- Skim well at the start for a clear broth.
- Even better reheated the next day.
