Provencal Ratatouille

Ingredients
- 1 aubergine
- 2 courgettes
- 2 peppers
- 4 tomatoes
- 1 onion
- 3 garlic cloves
- 4 tbsp olive oil
- Herbes de Provence
- Salt, pepper
Method
- 1Cut all the vegetables into even cubes.
- 2Saute the onion and garlic in the olive oil.
- 3Add aubergine and peppers, colour for 10 minutes.
- 4Stir in courgettes and tomatoes with the herbs.
- 5Cover and simmer for 30 minutes over low heat.
- 6Season and serve hot or cold.

- Saute the vegetables separately for the perfect texture.
- Even better reheated the next day.
