Green Lentil & Vegetable Soup

A rustic, hearty soup: green lentils simmered with carrots, onion, celery and tomato, fragrant with cumin. Budget-friendly, high in fibre and 100% plant-based, it warms winter days and improves the next day.
Ingredients
- 250 g green lentils
- 2 carrots
- 1 onion
- 1 celery stick
- 2 garlic cloves
- 400 g chopped tomatoes
- 1.2 L vegetable stock
- 1 tsp cumin
- 1 bay leaf
- 2 tbsp olive oil
- Salt, pepper
Method
- 1Rinse the lentils.
- 2Soften the diced onion, garlic, carrot and celery in olive oil.
- 3Add the cumin, stir 1 minute.
- 4Add the lentils, tomatoes, stock and bay leaf.
- 5Bring to the boil then simmer 30–35 minutes until the lentils are tender.
- 6Season; partly blend for a creamier texture (optional).
- 7Serve hot with a drizzle of olive oil.
