Minestrone (Italian Vegetable Soup)

Ingredients
- 2 carrots
- 2 courgettes
- 2 potatoes
- 1 onion
- 2 celery sticks
- 400 g chopped tomatoes
- 400 g cooked white beans
- 100 g small pasta
- 1 litre stock
- Basil, olive oil, salt, pepper
Method
- 1Cut all the vegetables into small dice.
- 2Saute the onion and celery in the olive oil over medium heat.
- 3Add carrots, potatoes and courgettes.
- 4Pour in the tomatoes and stock, simmer for 20 minutes.
- 5Add the white beans and pasta, cook for 10 minutes.
- 6Scatter with basil and serve with a drizzle of olive oil.
