Ingredients
- About 1 kg well-chilled watermelon
- 250 g Greek PDO feta
- 15–20 fresh mint leaves
- 3 tbsp fruity olive oil
- A dash of balsamic vinegar
- Fleur de sel, black pepper
Method
- 1Cut the watermelon into slices then even cubes, removing seeds.
- 2Arrange the cubes in a large bowl or on a platter.
- 3Crumble the feta over in large pieces.
- 4Finely shred the mint and scatter over.
- 5Drizzle with olive oil and a dash of balsamic.
- 6Salt very lightly (feta is already salty), pepper, toss gently.
