Ingredients
- 3 medium-to-large ripe avocados (about 570 g / 1¼ lb)
- Fresh hot green chiles to taste: about 2 serranos or 1 jalapeño, finely chopped
- ½ medium white onion, finely chopped (about 1/3 cup)
- 170 g (6 oz) ripe tomatoes (1 round or 2 plum), finely diced
- 4 tbsp (1/4 cup) coarsely chopped fresh cilantro
- 1 to 2 tbsp fresh lime juice

Method
- 1Rinse the chopped onion under cold water and drain well: it stays crisp without overpowering.
- 2Halve the avocados, remove the pits and scoop the flesh into a bowl.
- 3Mash coarsely with a fork or pestle: guacamole should stay chunky, not smooth.
- 4Fold in the chiles, onion, tomato and cilantro.
- 5Season with salt and lime juice, taste and adjust.
- 6Serve right away with tortilla chips or alongside tacos.
