Lebanese Tabbouleh with Parsley
Authentic Lebanese tabbouleh, ultra fresh: a mountain of finely chopped flat-leaf parsley, mint, tomatoes, a little fine bulgur and plenty of lemon. Vegan, light and fragrant, it's the perfect side or starter for summer meals and barbecues.
Ingredients
- 3 bunches flat-leaf parsley
- 1 bunch fresh mint
- 3 tomatoes
- 1 spring onion
- 50 g fine bulgur
- 2 lemons (juice)
- 4 tbsp olive oil
- Salt, pepper
Method
- 1Rinse the bulgur and let it swell in the lemon juice for 15 minutes.
- 2Very finely chop the parsley and mint.
- 3Cut the tomatoes into tiny dice and slice the onion.
- 4Mix herbs, tomatoes, onion and bulgur.
- 5Season with olive oil, salt and pepper.
- 6Chill for 30 minutes before serving.

- Parsley should dominate: it's above all a herb salad.
- Dry the parsley well after washing for a non-soggy tabbouleh.
