Ingredients
- 500 g shelled peas (fresh if possible, frozen work)
- 12 spring onions
- 1 lettuce heart (little gem or romaine)
- 60 g butter
- 100 g smoked bacon lardons (optional)
- 1 tsp caster sugar
- Salt, freshly ground pepper
Method
- 1Melt the butter in a saucepan over medium heat.
- 2Add the lardons (if using) and brown lightly over medium heat.
- 3Add the spring onions and sauté over medium heat a few minutes.
- 4Add the peas, shredded lettuce, sugar, salt and pepper.
- 5Pour in half a glass of water, cover and simmer gently 25–30 minutes: the smothered cooking concentrates the juices.
- 6Stir occasionally; the lettuce should melt completely.
- 7Adjust seasoning and serve hot.
