Herb Roast Chicken
The Sunday roast chicken: golden, crispy skin and tender flesh scented with thyme, rosemary and garlic. Dead simple to make and almost hands-off, it fills the whole house with its aroma. The ultimate comforting family dish, perfect with potatoes.
Ingredients
- 1 free-range chicken (about 1.5 kg)
- 4 garlic cloves
- 1 sprig thyme
- 1 sprig rosemary
- 50 g soft butter
- 2 tbsp olive oil
- Salt, pepper
Method
- 1Preheat the oven to 200 C.
- 2Mix the soft butter with the chopped herbs, salt and pepper.
- 3Brush the chicken with the butter, over and under the skin.
- 4Tuck the garlic and a sprig of herbs inside.
- 5Roast at 200 °C for 1h15, basting regularly with the juices.
- 6Check it's cooked (clear juices) and rest 10 minutes before carving.
Tips & tricks
- Baste every 20 minutes for moist flesh.
- Let it rest out of the oven before carving so the meat stays juicy.
Variations
- Lemon: tuck half a lemon inside.
- Place potatoes and onions under the chicken for a one-pan meal.
Storage
3 days refrigerated. The carcass makes an excellent stock.
