Grilled Halloumi Salad

Ingredients
- 250 g halloumi
- 2 tomatoes
- 1/2 cucumber
- A few salad leaves (rocket or baby greens)
- A few mint leaves
- 1 lemon
- Olive oil
- Pepper
Method
- 1Cut the halloumi into 1 cm slices.
- 2Grill 2 minutes per side in a dry pan until golden.
- 3Chop the tomatoes and cucumber, arrange over the salad leaves.
- 4Scatter with chopped mint.
- 5Top with the grilled halloumi.
- 6Drizzle with lemon juice and olive oil, add pepper (halloumi is already salty).
- 7Serve at once, while the cheese is hot.
