Coconut Vegetable Curry

A comforting plant-based curry: seasonal vegetables simmered in a coconut milk sauce fragrant with curry, ginger and garlic. Creamy, mild and colourful, served with rice and ready in about 30 minutes.
Ingredients
- 400 ml coconut milk
- 1 sweet potato
- 1 zucchini
- 1 bell pepper
- 1 onion
- 2 garlic cloves
- 1 piece ginger
- 2 tbsp curry paste (or curry powder)
- 1 tbsp oil
- 1 handful spinach
- Fresh cilantro
- Salt
Method
- 1Chop the onion, garlic and ginger, soften in oil.
- 2Add the curry paste and fry 1 minute.
- 3Add the diced sweet potato and pepper, stir.
- 4Pour in the coconut milk, bring to a simmer.
- 5Simmer 15 minutes, then add the zucchini; cook another 8 minutes.
- 6Stir in the spinach at the end, season.
- 7Scatter with cilantro and serve with rice.

- Cut the vegetables evenly for even cooking.
- Adapt the vegetables to the season (cauliflower, beans, squash…).
- A squeeze of lime at the end wakes up the curry.
