Chicken Pad Thai
Pad Thai, the iconic Thai dish: rice noodles stir-fried in the wok with chicken, egg, bean sprouts and peanuts, all coated in a sweet-and-sour tamarind sauce. Balanced between sweet, salty and tangy, it's an exotic dinner ready in 30 minutes.
Ingredients
- 250 g rice noodles
- 2 chicken breasts
- 2 eggs
- 100 g bean sprouts
- 50 g peanuts
- 3 tbsp soy sauce
- 2 tbsp tamarind paste
- 1 tbsp sugar
- 2 spring onions
- 1 lime, oil
Method
- 1Soak the rice noodles in hot water until softened.
- 2Make the sauce: soy, tamarind and sugar.
- 3Stir-fry the chicken strips in the wok.
- 4Push the chicken aside and scramble the eggs.
- 5Add the drained noodles and sauce, stir-fry over high heat.
- 6Stir in bean sprouts, onions and peanuts; serve with lime.

- Prep everything ahead: wok cooking is very fast.
- Don't over-soak the noodles, they finish cooking in the wok.
