Ingredients
- 1 sweet shortcrust pastry
- 4 lemons (juice + zest)
- 3 whole eggs + 3 yolks
- 150 g sugar (curd)
- 80 g butter
- 3 egg whites (meringue)
- 100 g sugar (meringue)
Method
- 1Blind-bake the pastry 15 min at 180 °C.
- 2For the curd: whisk the whole eggs, yolks, sugar, lemon juice and zest.
- 3Cook over low heat, stirring, until thickened, then stir in the butter off the heat.
- 4Pour the lemon curd into the pastry case; let cool.
- 5Whip the whites, adding the sugar gradually, to a firm, glossy meringue.
- 6Cover the tart with meringue in peaks.
- 7Brown the meringue in the oven (210 °C, 5–8 min) or with a torch.
