Chicken Tagine with Preserved Lemon
A meltingly tender chicken tagine, fragrant with preserved lemon, olives and Moroccan spices (ginger, saffron, cumin). Slow-simmered, the chicken becomes wonderfully tender. An exotic, warming dish, perfect with couscous or bread.
Ingredients
- 4 chicken thighs
- 1 preserved lemon
- 100 g green olives
- 2 onions
- 2 garlic cloves
- 1 tsp ginger
- 1 pinch saffron
- 1 tsp cumin
- Fresh coriander
- Olive oil, salt, pepper
Method
- 1Brown the chicken thighs in the olive oil over medium-high heat.
- 2Add the sliced onions and garlic, sweat them over medium-low heat.
- 3Stir in the spices and cover with water to halfway.
- 4Cover and simmer for 40 minutes over low heat.
- 5Add the sliced preserved lemon and olives.
- 6Continue for 10 minutes, sprinkle with coriander and serve.
