Summer Pasta Salad
A fresh, colourful pasta salad, perfect for picnics and summer lunches: al dente pasta, cherry tomatoes, mozzarella, basil and olives, all bound with a drizzle of olive oil. Ready in 20 minutes, it can be made ahead and travels easily.
Ingredients
- 300 g pasta (fusilli or penne)
- 250 g cherry tomatoes
- 150 g mozzarella (pearls)
- 100 g black olives
- 1 handful fresh basil
- 4 tbsp olive oil
- Salt, pepper
Method
- 1Cook the pasta al dente, rinse under cold water and drain.
- 2Halve the cherry tomatoes.
- 3Mix the pasta with tomatoes, mozzarella and olives.
- 4Add the chopped basil and olive oil.
- 5Season and toss well.
- 6Chill for at least 30 minutes before serving.
