A golden, melt-in-the-mouth leek quiche: leeks softened in butter, a creamy egg and cream custard, all on a crisp shortcrust base. A French classic, perfect warm as a main with salad, or as a starter.
Ingredients
- 1 shortcrust pastry
- 3 leeks (white and tender green)
- 3 eggs
- 200 ml crème fraîche
- 100 ml milk
- 50 g grated gruyère
- 20 g butter
- Nutmeg
- Salt, pepper
Method
- 1Preheat the oven to 190 °C. Line a tin with the pastry and prick the base.
- 2Slice the leeks and wash them thoroughly.
- 3Sweat them 10–12 minutes in butter over low heat until tender; season.
- 4Beat the eggs with cream, milk, nutmeg, salt and pepper.
- 5Spread the leeks over the pastry, scatter the gruyère, pour over the custard.
- 6Bake 35–40 minutes until golden and set.
- 7Let cool a few minutes before unmoulding.

- Wash the sliced leeks well to remove grit.
- Blind-baking the base 10 min prevents a soggy bottom.
- Freshly grated nutmeg makes the custard.
