Green Asparagus Velouté with Parmesan
An elegant, quick spring starter: seasonal green asparagus blended with shallot, garlic and vegetable stock, finished with a touch of cream and Parmesan. The reserved tips make the garnish. Mild, silky and a lovely soft green — asparagus season only lasts a few weeks, make the most of it.

Ingredients
- 500 g green asparagus
- 1 shallot
- 1 garlic clove
- 500 ml hot vegetable stock
- 2 tbsp olive oil
- 2 tbsp crème fraîche or thick cream
- 30 g grated Parmigiano Reggiano
- Salt, pepper
Method
- 1Wash the asparagus, cut off the tips (reserve for garnish) and trim the woody ends.
- 2Cut the stalks into pieces. Peel and slice the shallot and garlic.
- 3Sweat the shallot and garlic in olive oil, add the asparagus pieces and stir for 2 minutes.
- 4Pour in the hot stock and cook about 15 minutes, until tender.
- 5Meanwhile, boil the tips 3–4 minutes in salted water and refresh.
- 6Blend the soup, add the Parmesan and cream, and blend again until silky.
- 7Adjust seasoning; serve with the tips and a drizzle of olive oil.

- Refreshing the tips in iced water sets their green colour.
- For an extra-fine velouté, pass through a sieve after blending.

- Dairy-free: plant cream and nutritional yeast instead of Parmesan.
