No-bake energy bites: dates, almonds and cacao blended then rolled into balls. Naturally sweetened by the dates (no added sugar), they're perfect for a healthy snack, pre-workout or teatime. Ready in 10 minutes.
Ingredients
- 200 g pitted dates (Medjool if possible)
- 100 g almonds (or rolled oats)
- 2 tbsp unsweetened cocoa powder
- 1 tbsp coconut oil (optional)
- 1 pinch salt
- Desiccated coconut or cocoa to coat
Method
- 1If the dates are dry, soak 10 minutes in warm water then drain.
- 2Blend the almonds to a coarse powder.
- 3Add the dates, cocoa, coconut oil and salt.
- 4Blend to a paste that holds together.
- 5Roll small balls by hand.
- 6Coat in desiccated coconut or cocoa.
- 7Chill 30 minutes to firm up.
Tips & tricks
- Soft Medjool dates bind the paste perfectly.
- If the paste is too dry, add a date or a little water.
- They keep well: handy to make ahead.
