Chili sin Carne (Vegan Bean Chili)

- 400 g red kidney beans (cooked)
- 400 g black beans (cooked)
- 400 g chopped tomatoes
- 150 g corn
- 1 onion
- 1 red bell pepper
- 2 garlic cloves
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chilli (to taste)
- 1 tbsp oil
- Salt, pepper
Method
- 1Soften the chopped onion, garlic and pepper in oil.
- 2Add the spices and fry 1 minute.
- 3Add the chopped tomatoes, stir.
- 4Stir in the drained beans and corn.
- 5Simmer 25–30 minutes over low heat, stirring now and then.
- 6Season and adjust the chilli.
- 7Serve with rice, avocado or tortillas.
