Quinoa Buddha Bowl

A complete, colourful, balanced bowl: quinoa, roasted vegetables, chickpeas, avocado and a creamy tahini-lemon sauce. The healthy plant-based meal par excellence, built to the season and your cravings.
Ingredients
- 150 g quinoa
- 200 g chickpeas (cooked)
- 1 sweet potato
- 1 carrot
- 1 avocado
- A handful of baby greens
- 2 tbsp tahini
- 1 lemon
- 1 tbsp olive oil
- Cumin, paprika
- Seeds (pumpkin, sesame)
- Salt
Method
- 1Roast the cubed sweet potato and carrot (200 °C, 25 min) with oil, cumin and paprika.
- 2Cook the quinoa in twice its volume of water, 12–15 minutes; drain.
- 3Drain the chickpeas (roast with the veg for crunch, optional).
- 4Make the sauce: tahini, lemon juice, a little water, salt, until creamy.
- 5Divide the quinoa between bowls.
- 6Arrange roasted veg, chickpeas, sliced avocado and greens.
- 7Drizzle with tahini sauce, scatter seeds.
